How to make a cake and skip the detergent ingredient (SLS) found in commercial box mixes

Me too!

If you’re like most people you have a special place in your heart for [insert your favorite cake here]. Maybe it’s the angel food cake that your grandma made. Or your mother’s cheesecake. Or the traditional German chocolate cake that gets served on birthdays in your family.

In case you were wondering, my favorite cake is lemon.

Whatever yours is, chances are it’s one that is baked from scratch. No box mixes for these babies, that’s for sure. That’s why they’re special. They only get created when people set aside the time to craft a cake for those special occasions.

And now I hear you wondering…”What’s so bad about cake mixes, Stephen? They are so convenient and make life a lot easier.”

I’m so glad you asked.

I get it. Cake mixes are convenient.

But there’s something that you really need to know about what’s hiding in that box.

See I’m not a food ingredient expert. But I am an expert when it comes to cleaning products. And that’s why I was blown away when I discovered that one of the toxic ingredients in laundry products can also be found in cake mixes.

It sometimes hides under the generic term “whipping aid.”

This stuff is really harmful. Some people have allergic responses to it. And studies have shown that it can cause pain and inflammation of the tongue. Heck SLS can even be found in toothpaste (so make sure you check the labels and buy one without it).

That really makes you wonder why SLS is in anything, much less something you put in your mouth.

Or on your body; because this stuff is also known to cause eczema or other skin irritation. Which is why I get so frustrated when the other guys use it in your laundry detergent.

Sure it makes the detergent foamy, but what’s the point if you’re going to be itchy every time you put on freshly washed clothes? Foamy doesn’t mean clean. It just means there’s a lot of foam.

I know SLS is not necessary for clean clothes. I also know that with these kinds of ingredients the more you are exposed to them the higher the probability that you’ll develop a sensitivity of some kind.

I decided to share my very favorite cake recipe with you. Actually, I went one step further. I asked our in-house nutrition educator to bump up the ingredients just a little and make this the absolute best lemon cake ever. It’s gluten-free and bursting with flavor.

Stephen’s Amazing Lemon Cake

3 large eggs, separated
1 1/2 cups almond flour
2 tsp baking powder
1/2 tsp sea salt
1 cup organic buttermilk
1 cup evaporated cane juice crystals (organic sugar)
zest of 2 medium lemons
1/2 tsp lemon juice
1/2 cup organic butter, melted

Directions

Preheat oven to 350 degrees F
Grease an 8.5 x 4.25 loaf pan
Whip egg whites until a peak is formed
Mix almond flour, baking powder, and sea salt together until well combined
In another bowl whisk together buttermilk, sugar, egg yolks, lemon zest, and lemon juice together
Slowly blend dry ingredients into wet ingredients
With a spatula slowly fold melted butter into the batter until fully incorporated
With a spatula slowly fold egg whites into the mixture until fully incorporated
Pour batter into greased pan
Bake 50 minutes or until a cake tester shows the cake is done
Remove from oven and let cool 10 minutes in the pan
Turn out onto a baking rack to cool
Meanwhile, make lemon frosting for topping

*if you don’t have buttermilk you can substitute 1 cup organic whole milk + 1 tablespoon apple cider vinegar (preferably raw and unfiltered)

Lemon Frosting

1 bar organic cream cheese, room temperature
1/4 cup organic butter, room temperature
1/4 cup honey, raw and local preferred
1 teaspoon lemon juice

Whip all ingredients together until fully combined and smooth
Frost cake loaf once it is fully cooled
